Why
Against two players who are level and set, the middle is the best place to hit and the least obvious. A ball down the middle arrives where neither player owns it, forcing a decision under time pressure, and it removes the geometry they need to counter: from the centre of the court there is no sharp angle available to either of them, so the reply comes back into the middle where you and your partner are waiting. Wide balls feel aggressive and open your own court to the counter.
What this means at your level
Beginner
Aim between them rather than past them. It feels less exciting and it wins a great many more points.
Intermediate
Deep matters as much as central. A short middle ball is comfortable for them; a deep one at their feet is not.
Advanced
The middle also attacks their communication. Two or three balls into the seam and a pair starts hesitating, which is the moment the down-the-line volley finally becomes worth playing.
