Why
If a player serves out of turn, the partner who should have been serving takes over as soon as the error is discovered, and all points played up to then stand. If a whole game was completed with the wrong server, the game stands too and the order continues as if that game had been served correctly: the rules never rewind. The same principle applies to a receiver taking the wrong side: fix it when noticed, keep the score.
