Why
At the start of each set the pair chooses which partner serves first. From then on the order is fixed: each time the serve comes back to your pair, the other partner serves. You may only change the order at the start of a new set. If you serve out of order by mistake, it is corrected as soon as it is noticed, but the points already played stand. The same is true for the receiving positions: fixed for the set, changeable between sets.

Remember who served your first game. Whoever it was, the other one serves next time.
Intermediate
Choose the first server by who volleys best from the deuce side, since the server's first volley is the shot that starts most points.
Advanced
Change the order between sets if the first set showed one server being broken repeatedly. The rule lets you, and pairs rarely use it.
